New Apartment ethernet setup?

I have recently moved into a new apartment build 1 month ago, luckily the whole unit has Ethernet ports in all bedrooms, kitchen and living room. All of the end cables (including Coaxial) lead into the Verizon closet in the master bedroom. I signed up for Verizon 1GB FIOS internet, once the technician came over a few days later, I asked him if he could activate the Ethernet port in the middle bedroom (our computer room). He installed the ONT box and then located which Ethernet cable leads to that room and connected the Ethernet cable to the ONT box. The FIOS Modem powered on and within a few minutes we had internet YAY!. After they left, I proceeded to release the IP address from the Fios Router and installed my Router (ASUS RT-AC88U) instead, works like a dream. I did ask the technician why he couldn't connect the other Ethernet cables to activate all the rooms with wired internet. His response was " I'm only allowed to activate 1 Ethernet connector for the modem, each other one would cost 75.00 to finish making those connectors and would require a switch".  Taking that into account currently I am thinking of taking a few Ethernet cables (2 or 3) and finish making the connectors myself and using a switch (a managed one by netgear) to make the other ports in the apartment active such as the port in the living room where my TV and consoles are at, I would use another switch there to connect my TV, Xbox one, ps4 and switch via wired. Would this setup still work with my router being in another room.  Just want to make sure this works properly with the least amount of issues. Any advise or questions are welcome.
